Paul discovered his love for cooking by working in his grandfather’s restaurant in Tepic, Nayarit that specialized in the regional specialty of Pescado Zarandeado .

Now, as Chef of Pacifico Beach Club, Chef Paul uses traditional and modern techniques, and ingredients from the Pacific coastal areas of Baja and Sinaloa to create a menu of Latin grill specialties
