With more than 10 years of experience, Rogelio has been characterized by his artisanal technique in the preparation of sushi and niguiris, the same technique he learned from his mentor Chef Yasuo Asai – Founder of ASAI restaurants and curator of ASAI Punta Mita’s menu – who specially chose him to be the chef in charge of Asai Punta Mita’s kitchen.
