Born in México City with Oaxaca cuisine roots, Sergio decides to study at the prestigious “Universidad del Claustro de Sor Juana”, during this lap, he works at different restaurant kitchens like: Tezka at the Royal Hotel and at Starwood Hotel Properties.
After finishing his culinary studies in the summer of 2008, he travels to Girona, Spain where he had his first stage in Europe at “El Bullí” Restaurant, directed by Chefs Ferrán and Albert Adrià, completing his training in kitchens at the Basque Country and southern France.
In 2010, he joins Starwood Hotels & Resorts as head chef of different properties such as Westin Santa Fe and the St Regis Punta de Mita in Mexico and the St Regis Doha in Middle East.
At 2014 as Executive Chef of the W Hotel in Mexico City, he works under the tutelage of celebrity chef José Andrés, to create J by José Andrés, giving him the opportunity to open his panorama in North American cuisine
In 2016 he works as Culinary Brand Director of “Nativo: Taller Gastronómico”, with locations in Guadalajara and Mexico City.
Currently he develops restaurant brands such as CACHALOTE Seafood Bistro, Common Pizza, “INÉS Cocina de Barrio” and LA VELETA by DLGR.
