David VIDALES
Originally from San Jose del Cabo, in Baja California Sur, he traveled to complete his formal chef’s training at the Corbuse Culinary Institute in Guadalajara, and took advantage of its proximity to the town of Tequila, the birthplace and official home of this famed spirit of Mexico, to learn about the history, making and unique flavor profiles of the drink.
He returned to Los Cabos to work at Ruths Chris Steak House, which taught him everything a young chef could need to know working in one of the world’s most famous steak houses, including on-going culinary training in butchery skills and the latest in trends and cooking techniques, and was sent for farm-to-table training in Wichita and Dodge City, Kansas, to learn from the experts about how to bring the finest cuts of beef to diners.
With ongoing training in service skills, restaurant management and food safety certifications, Chef David brings an experience beyond his years to Punta Mita as Executive Chef, presenting dishes that exceed the expectations of the most demanding diner.
