Matt Dahlkemper

As executive chef at the Pendry West Hollywood, Matthew Dahlkemper oversees culinary operations for the hotel’s marquee dining concepts, as well as in-room and in-residence dining experiences. He brings extensive knowledge to the luxury hotel, as he also oversees the culinary concepts at legendary chef Wolfgang Puck’s Merois, located atop the Pendry West Hollywood, with a menu that showcases the sophisticated subtleties of Japanese, Southeast Asian and French-Californian cuisine.  In addition, he is responsible for catering special events and in-room dining, as well as in-residence dining at Pendry Residences West Hollywood

Dahlkemper’s career path has taken him to multi-faceted positions at top hotels around the world, where he has led culinary teams large and small. His previous experience includes menu conceptualization and food and beverage programming for a variety of hotel openings including the Four Seasons Dubai, Cosmopolitan Hotel and Casino in Las Vegas, and The James Royal Palm Hotel in Miami, as well as multiple Michael Mina concepts. Most recently, Dahlkemper was at the helm of The Beekman Hotel & Temple Court, where he oversaw several Tom Colicchio food and beverage concepts in New York
