Experienced international chef Maycoll Calderón has worked at prestigious restaurants worldwide, including elBulli with Ferran Adrià, Zarautz with Karlos Arguiñano, and Arzak with Juan Mari Arzak. He trained at the AIALA Cooking Academy in Spain, known for his creative and avant-garde cuisine. In Mexico, he has led J&G Grill at St. Regis and now owns several successful restaurants like Hanky Panky Cocktail Bar, Olenna, Casa M, Huset, and Cuna. With Huset celebrating 8 years in CDMX and Hanky Panky Cocktail Bar ranking 22 in The World’s 50 Best Bars, Calderón continues to innovate with local ingredients across his restaurants, including in Mérida, Yucatán.
